Thanks you guys for the recipes. It gave me some new ideas at least. Steph...I would love the potato soup recipe from Marcy. It's my favorite. Tonight, however, I made a house favorite. Except my girls...they hate it...they hate ALL food that is mixed up. Anyway, this is what I made...
CHEESY POTATO SAUSAGE CORN SOMETHING SOUP....(I have no idea what the name of it really is)
3 cans potatoes(yes, super easy)
2 cans corn
1 tube thingy of breakfast sausage
1 big block Velveeta
1 or 2 cans rotel(depends on how spicy you want it)
Make queso with Velveeta and rotel like normal. In meantime, dump corn and potatoes in crock pot. Brown sausage and pour in with corn and potatoes. Then, when queso is done, pour it in crock pot also. Stir, warm, done!! A very tasty cheesy, potato, corn, something! Not exactly the most low fat, low carb recipe I have ever made, but yummy!! I serve it with cornbread! The boys and I LOVE it!

Spinach Soup recipe that Shelley's mom forwarded to me this morning. She had this at Threadgills in Austin:
1 onion
3 cloves Garlic
1 sm Tomato
1# Fresh Spnach
1 t salt
2 t Black Pepper
3 Dashes of Worchestire
1 Dash Tabasco
1 Qt Chicken or Veggie Broth
3 cups of Jack Cheese.
Place everything in a soup pot, except for the cheese. Bring to a boil and reduce to a simmer until the veggies are tender. Puree in a blender. Add cheese. Garnish with Fresh Spinach, Shredded Jack and a little Salsa.
